Al Pastor Tacos Recipe

Ingredients

2 pounds pork tenderloin

1/2 cup Chipotle Pineapple Marinade

16 (6-inch) corn tortillas

1 cup diced pineapple

1/2 red onion, thinly sliced

1/2 cup chopped cilantro

1/2 cup crumbled queso fresco

Method of Preparation

Add pork tenderloin and Chipotle Pineapple Marinade to a slow cooker. Cover and cook on high for about 5 hours or until pork is tender. Shred pork and toss with juices in slow cooker. Serve on corn tortillas with toppings and additional Chipotle Pineapple Marinade if desired.
